Watermelon, Grilled Peach, and Blackberry Fruit Salad with Honey Lemon Yogurt Sauce

I honestly thought this would be just another fruit salad. Just a sweet side dish on a hot summer day. I should’ve trusted the great Bobby Flay, because this is really delicious!

It’s the yogurt sauce, a simple combination of yogurt, honey, and lemon juice. I was surprised how much I loved the flavor itself, as well as how much it enhanced the flavor of the individual fruits.

I was serving this dish to someone who disliked watermelon, so for him, I made a variation in which I substituted green grapes and fresh blueberries. Those worked just as well, so feel free to experiment with different fruit types, if you want.

The original recipe calls for this salad to be topped with toasted sliced almonds. I’d love to tell you I omitted them for a deliberate and inspired reason, but the truth is I simply forgot them! I wish I hadn’t, though; they would be delicious with this. So don’t be like me, and don’t forget the almonds!

Watermelon, Grilled Peach, and Blackberry Fruit Salad with Honey Lemon Yogurt Sauce
(Original recipe: Bobby Flay’s Boy Meets Grill)

1 C vanilla yogurt
2 TBSP honey
1 TBSP fresh lemon juice
4 peaches, pitted and sliced
8 wedges of watermelon
1 pint blackberries
1/2 C sliced almonds, toasted

Combine yogurt, honey, and lemon juice in a small bowl and mix until smooth.

Over medium heat, grill peach slices on both sides until they’re golden brown and caramelized. Don’t let them get too soft, though; you don’t want them to get mushy.

Once the peaches are grilled, arrange all the fruit on a large plate or platter. Drizzle the yogurt sauce evenly over all the fruit. Sprinkle with toasted almonds and serve immediately.
