California Club Pizza

Do you have California Pizza Kitchen restaurants where you live? We used to have several locations nearby, but unfortunately, they had to close. Their pizza wasn’t exactly authentic Italian, but they were good at their west-coast interpretation of the food they served.

My favorite CPK pizza was their California Club Pizza. It’s covered in tossed lettuce and doesn’t even have a sauce, but I fell in love! Think a flatbread version of a BLT plus chicken and avocado, making it a filling yet refreshing meal during hot summer days.

The original recipe includes a homemade pizza dough, but we went with a premade crust from the grocery store. I understand that time restrictions frequently don’t allow for making dough from scratch. But if you prefer, by all means, click on the original recipe link to try the homemade crust!

California Club Pizza
(Original recipe: Tried and Tasty)

1 premade pizza crust (we prefer Boboli)
Olive oil for drizzling
1 boneless skinless chicken breast, cooked and chopped
1-1/2 – 2 C shredded low-moisture mozzarella cheese
8 slices bacon, cooked and chopped
1 large tomato, sliced
2 C shredded romaine lettuce
2 TBSP mayonnaise
1 tsp fresh squeezed lemon juice
Salt and pepper to taste
1 avocado, sliced

Preheat oven to 425F degrees.

Lay premade pizza crust on a sheet pan or pizza pan/stone drizzled with olive oil. Drizzle a little olive oil on the crust, then sprinkle on a little salt.

Evenly spread shredded mozzarella cheese over the crust. Then add cooked chicken and chopped bacon, sprinkled evenly over the cheese. Bake according to the crust package directions (approx 15 minutes) or until crust is golden brown and toppings are bubbly.

While the pizza is in the oven, mix lettuce, mayonnaise, lemon juice, salt, and pepper in a mixing bowl.

Once the pizza is done, remove it from the oven. Layer tomato and avocado slices on the top. Spread the lettuce mix on top of tomatoes. Serve immediately.
