Classic Tomato Bruschetta

This is one of the first recipes I learned to make over 20 years ago. A friend had recently returned from Italy and was eager to share the flavors she had enjoyed. One taste and I was hooked! We’ve been enjoying this traditional Italian mix ever since!

In addition to this basic recipe, you can find lots of variations using ingredients such as artichokes, olives, and various cheeses. But this one is the classic for a reason!

Serve traditionally over toasted crusty bread that’s been drizzled with olive oil and rubbed with a garlic clove. This mix is also delicious as a topping for roasted chicken. Sprinkle some Parmigiano Reggiano on top for a delicious dinner idea!

Classic Tomato Bruschetta

8-10 Roma tomatoes, seeded and diced
Half of a red onion, finely chopped
2 cloves garlic, minced
1 bunch of basil, julienned
1 TBSP olive oil
1 TBSP balsamic vinegar
Salt and pepper to taste

Combine all ingredients. Refrigerate for at least 1 hour before serving. Serve over toasted crusty bread drizzled with olive oil.
