The second flavor profile in our Chicken Salad Series is Honey Dijon Poppy Seed. This recipe is loaded with flavor! Savory chicken and onions pair beautifully with the sweetness from cranberries and honey, the crunch from pecans, and acidic tang from Dijon mustard. I also think chunks of salty bacon would make a delicious addition!

Honey Dijon Chicken Salad with Pecans and Cranberries

Salad
4 C chicken breasts, cooked and chopped
1 C pecans, chopped (we prefer roasted and salted pecans)
1/2 C dried cranberries
4 stalks of green onions, chopped
Dressing
1/2 C mayonnaise
1/4 C sour cream
2 TBSP honey
1 TBSP Dijon mustard
1 TBSP poppy seeds
Salt and pepper to taste
In a medium bowl, combine all dressing ingredients. Whisk until well combined.
In a large bowl, combine all salad ingredients. Add salad dressing and toss to coat.
Add salt to taste. Serve or store in the fridge.
