Blue Cheese Coleslaw with Bacon

One of the most common sides in the summer is coleslaw, but sometimes the same ole coleslaw gets boring. Insert this fantastic recipe! The creamy zing of the blue cheese combined with the saltiness of the bacon make this a fantastic side to all of your favorite summer dishes!

TIP: Feel free to use your favorite type of blue cheese. This recipe works great with Roquefort, stilton, or gorgonzola!

NOTE: It goes without saying, but this recipe is for fans of blue cheeses, as that flavor is strong and predominant. I adore blue cheese, so I really enjoy this coleslaw. But if you dislike blue cheeses, you might want to try one of our other favorite salads instead!

Blue Cheese Coleslaw with Bacon
(Original recipe: House of Yumm)

10 oz chopped cabbage and carrots (or bagged coleslaw mix)
1/4 C mayonnaise
1/4 C sour cream
1 TBSP apple cider vinegar
1/2 TBSP sugar
2/3 C blue cheese crumbles
4-6 slices bacon, cooked and chopped (plus more for topping)
Salt and pepper as desired

dd the mayonnaise, sour cream, apple cider vinegar, and sugar into a medium sized bowl. Stir to combine. Fold in the blue cheese crumbles.

Add in the cabbage, carrots, and bacon pieces. Stir until completely coated.

Top with additional bacon bits and serve immediately.
