Crispy Baked Garlic Parmesan Chicken Wings

2 lbs chicken wings and drumettes
5 TBSP olive oil, divided
1 tsp sea salt
1 tsp black pepper
3 TBSP butter
3 garlic cloves, minced
4 TBSP grated parmesan cheese, divided
⅛ tsp smoked paprika
¼ tsp red pepper flakes (optional)
Salt & pepper to taste
Chopped chives and parsley to garnish

Preheat oven to 400F.
Add chicken to a large bowl. Pat chicken dry. Drizzle with 2 TBSP oil, salt, and pepper. Gently toss to coat evenly. Place chicken on a wire rack lined baking sheet. Bake for 40 minutes, flipping the chicken after 20 minutes.
Once baked through, turn the broiler on high. Place chicken under broiler for 8-10 minutes, until evenly browned.
In the meantime, heat a medium sauce pan to medium heat. Add butter and remaining 3 TBSP olive oil to the pan. Once butter is melted, add the garlic to the pan. Let cook in the liquid for 2-3 minutes, or until fragrant. Add in 2 TBSP parmesan cheese, smoked paprika, red pepper flakes, salt & pepper. Stir to combine. Let the sauce simmer for another 2 minutes.
Place cooked chicken in a large bowl and pour the garlic parmesan sauce over the chicken. Toss the wings to coat them evenly with the sauce.
To serve, top the wings with the remaining 2 TBSP of parmesan cheese. Sprinkle chopped chives and a sprinkle of parsley on top for garnish.
