Greek Chicken Meatballs with Lemon Feta Spinach Orzo

A delicious meal is one thing. This meal is bursting with the favorite flavors of Greece, like garlic, lemon, feta, oregano, and dill.

But delicious and easy? That’s worth sharing! The orzo comes together in a single pot, while the meatballs cook up easily in a skillet. Whip up a quick yogurt sauce on the side, and it’s ready!

I cleaned up the ingredients from the original recipe to be more health conscious: whole wheat orzo, fat free feta, olive oil, nonfat Greek yogurt. But once you taste this dish, you’ll never believe it’s a healthier meal option!

Greek Chicken Meatballs with Lemon Feta Spinach Orzo

Greek Chicken Meatballs
1 pound ground chicken
1 large egg
1/2 C feta, crumbled
1-1/2 tsp dried oregano
1 tsp basil
1 tsp onion powder
1 tsp garlic powder
1 tsp dill
1 tsp parsley
1/2 tsp salt
1/2 tsp pepper

In a large bowl, mix all your meatball ingredients with your hands until just combined. Form the mixture into 15 meatballs, about the size of a golf ball.

In a large pan over medium heat, heat 1 TBSP of olive oil. Add your meatballs, making sure they have enough room to brown evenly. Use tongs to continuously flip the meatballs until they are fully browned, about 5-6 minutes.

Cover with a lid and cook the meatballs for another 5-6 minutes until they reach 165F in the centers. Take care not to overcook them, and remove them from heat while you assemble the orzo.

Lemon Feta Spinach Orzo
1 C dried whole wheat orzo, cooked according to the package
1 C baby spinach leaves
The zest of 1 lemon
1 TBSP fresh lemon juice
2 TBSP olive oil
1/4 C feta cheese, crumbled
1/2 tsp oregano
1/2 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper
1/4 tsp dill

Add all the ingredients to a large bowl. Be sure to do so while the cooked orzo is still warm. The residual heat will wilt the leaves and soften the feta. Mix until fully combined.

Dill Feta Yogurt Sauce
1/2 C Greek yogurt (I used nonfat)
1/4 C feta, crumbled
1/2 tsp garlic powder
1/2 tsp dill
Salt and pepper to taste

To make the sauce, mix all ingredients in a bowl and stir until smooth.

To serve, place the cooked meatballs over the warm orzo, drizzle the top with yogurt sauce, and enjoy!
