Feeding a lot of people early in the morning can be a real chore, and breakfast casseroles take a long time to bake and are frequently high in fat and calories. If you’re looking for a healthier one-dish breakfast dish that will leave everyone satisfied and ready for the day, try this Sausage and Veggie Breakfast Skillet.


NOTE: This is a one-pan dish, but you cook everything separately before combining. There is no need to clean the pan in-between, however, because the flavors left behind will leave a fond and enhance the taste of the whole dish. Be careful not to let the fond burn, however!
TIP: This meal also makes a great make-ahead breakfast that you can pre-portion, keep in the fridge, and reheat in the microwave in the mornings.
TIP: Be sure to taste the dish before adding any salt! Many seasoning blends already contains a lot of salt, and it might not need any additional.


Sausage and Veggie Breakfast Skillet
Olive oil
1 lb your favorite sausage links (I prefer Isernio’s Chicken Sausage)
1 bell pepper, cut into chunks
1 small yellow onion, cut into chunks
1 russet potato, cut into chunks
1 TBSP your favorite seasoning blend (We used Flavor God Everything seasoning)
Salt and pepper to taste
OPTIONAL: pepperoncinis
In a skillet over medium heat, cook your sausage slices in olive oil until browned on both sides. Once they are cooked through and golden, remove them from the skillet and set aside.
In the same skillet over medium heat (no need to clean the pan first), heat a little more olive oil and brown all sides of your potato chunks. Be careful not to overcrowd the pan. Once the potatoes are golden and crispy, remove them from the skillet and set aside.
In the same pan over the same medium heat (no need to clean the pan first), sauté the onion and bell pepper chunks in more olive oil. Turn frequently to make sure they are cooked on all sides. Once those become softer and are beginning to brown, add the sausage and potatoes back into the pan.
Add your seasoning blend and toss to combine well. Cook everything together just long enough to reheat it.
Taste the dish and add more seasoning, if you prefer. Add salt and pepper to taste, if needed. Serve immediately with optional pepperoncinis on the side.
